The nose is very subtle, slowly releasing hints of baked pears, ginger. After a few swirls the bouquet opens up and releases aromas of orange peel, and cinnamon. The palate is restrained and elegant, very much like a fine cognac, the alcohol is beautifully integrated and is balanced by flavours of toffee, oak, and vanilla. The silky finish is long and as it eventually fades leaves you with chocolatey notes.

Amber in color. Aromas of clay, rubber sole, and roasted coconut with a dry light-to-medium body and a roasted nut, mineral, cream, and pepper accented finish. A very nice, characterful, dry dark rum for sipping or mixing.

No age statement. The entry level Appleton is a bit rustic and punchy, with some sharp medicinal character to it. Cockspur XO is a work of art. This vintage rum is aged to perfection in American bourbon-oak barrels and, only then, the best casks are hand-selected by our master-blender. These are then blended together and left to marry in Spanish Oloroso sherry casks.

The significantly higher age is immediately noticeable in intensity and complexity. Oak tones are overly clear and bring with them a whole load of spices: cinnamon and nutmeg, subtle clove, vanilla, saffron and a very fine smoke also come through. There are more fruit notes, which can be found here, but also rich honey, caramel and coffee and walnuts on a long warm finish.

A double distillation of fresh sugar cane juice—crushed within two hours of being cut—the white rum is made with a blend of pot and column distillation with a long resting of the finished product on stainless steel. The smooth end product displays vanilla, coffee bean, and grass on the bouquet with fresh berries, citrus zest and cactus notes to finish.

The Batch Kettle Still was brought to Diplomático’s La Miel distillery in 1959. This semi-artisanal distillation system is originally from Canada, where it was employed for the production of American whisky. Using the best sugar cane honeys, this unique distillate is aged for 6 years in American white oak barrels, that previously served to age bourbon and scotch, resulting in a delicious medium-body and complex rum.
