Ireland’s oldest surviving distillery is Bushmills in County Antrim in Northern Ireland. There has been a whiskey still on site since the beginning of the sixteenth century, although Bushmills itself began production in the 1780s. Bushmills is traditional pot-still single malt distiller, which produces six different brands, two malts and four blends: Black Bush, Bushmills 1608, Coleraine and Original Bushmills. The 21 year is comprised of two aged whiskeys: one is matured only in ex-bourbon casks and the other in Oloroso Sherry casks. They are then removed from those casks to be joined together in casks previously containing Madeira wine. They get nice and cozy for two years before being released into the world. All bottles are now individually numbered.
Brilliant amber color. Aromas of banana creme brulee, flower patch, honeyed fig cake, and African spices with a silky, dry-yet-fruity medium-to-full body and a creme Anglaise, orange Pekoe tea, mossy stone, dusty grain, and oak spice finish. A nicely framed oak aged Irish whisky.
